Birthday cupcakes

I made cupcakes for my little Princess to take into school for her birthday. I was given an alergy friendly recipe from a neighbouher when I went to grab some egg replacer from her so I could make them so her little boy and any other egg alergy suffers could join in on the fun.
I think with how common alergies are especially egg that it is rude not to consider the possiblity of children in your child's class could be alergic to at least eggs. Think how those poor kids feel to see the entire class is eating cakes and they are not. I know you could consider not sending in cakes at al but what is the fun in that. Doing something special for the birthday child is half the fun especially if they are at school with all their friends and not at home really for their birthday.

I also made some frosting to go on top and added some fun with sprinkles. I am pretty sure there is no dairy alergies in the class but if there was you could do glace icing or lollies instead.
This was also my first time of using a piping bag, that is a tricky thing to do especially in cold weather. Hmmm next time shall do it in the day instead.
The recipe originally came from Anaphylaxis Australia Inc. Plus this week is actually Allergy Awareness week here in Australia.

So here is the recipe for you to go and do for your child next time you send them of to school or pre-school with cupcakes for their birthday.

Party Cup Cake Recipe

1 1/2 Cups Self Raising Flour
1/3 Cup dairy and egg free custard powder
1 cup sugar
1/3 Cup canola Oil
1 Teaspoon vanilla essance
1 Cup cold water

Preheat oven to 180 Celsius
Combine flour, custard powder and sugar
Add oil,water and vanilla essance and mix real well
Pour into patty cases/ cupcake cases till almost full
Cook at 180 degrees celsius for about 20minutes or until skewer is inserted and comes out clean.
Cool on a rack then decorate.
